

Introducing Chai Gilber – Connector, Director Greater Barrie Organics Conference 2012 Ecofest Barrie
Amy Chai Gilbert studied Therapeutic Recreation at Concordia University and is a certified yoga instructor. She is actively involved in the Collingwood Transition movement, the Georgian Bay Food Alliance and is a founding board member of Free Spirit Gardens. Only two years ago, Chai planted her first veggie garden and began to dream about homesteading and inspiring others to live a more simple way of life. In the fall of 2011, Chai opened up Collingwood's first vegetarian/organic B&B and has created a unique place where people can come to slow down and experience the joys of simple, balanced living. Givingtree B&B provides eco-friendly hospitality by serving a wholesome breakfast menu made with local, organic and fair trade ingredients. As a small-scale organic grower, Chai now grows several varieties of micro-greens which she sells to local markets, restaurants and serves in her "Givingtree green smoothies". Besides spending time in her backyard, Chai can be found volunteering in the community, teaching yoga, or cooking up something delicious in her kitchen.

All materials to be shown at the festival must pass our GREEN INSPECTION and will
be subject to removal without prejudice or harm intended. We are a Green Festival and
we ask that you respect the following:
The following items will not be allowed: Styrofoam, Plastic Water Bottles, Hand distributed flyers (other than those previously approved), plastic bags, plastic utensils. Please do not post any bills or signs outside of your own presentation area.
Smoking is not permitted on the Festival Grounds and there is to be no Idling on Festival property.
